Menu options for the week of January 30th

Breakfast options:

Loaded breakfast potatoes (roasted potatoes topped with scrambled eggs and turkey bacon and cheddar cheese served with sour cream and salsa on the side)

Mediterranean chicken and quinoa salad (shredded chicken, quinoa, Kalamata olives, red bell pepper, tomato, cucumber, and goat cheese tossed in a red wine vinaigrette) can substitute quinoa for cauliflower rice for low carb option

Thai coconut soup (chicken, carrots, onion, mushrooms and served with basmati rice)

Enchilada casserole with choice of ground beef, ground turkey, or shredded chicken

Lunch/dinner main dish options:
